In January 2018, an opportunity emerged in Paphos—a gap in the market for a revolutionary “healthy eating” restaurant. As a family, we had already transitioned away from consuming meat, and the struggle to find convenient, wholesome vegetarian options was becoming increasingly frustrating.
With the end of our existing business on the horizon, we yearned for a fresh start, propelling us to embark on thorough research and explore the potential to revolutionise vegetarian dining in Paphos. Immersing ourselves in eye-opening documentaries like “Forks over Knives,” “Cowspiracy,” and “What the Health,” as well as following the inspirational journeys of activists like Joey Carb- strong and Ed Winters (Earthling Ed), our mission gained an even stronger momentum, fueled by the shocking revelations we encountered.
We followed online cooks, chefs, and influencers, awestruck by the incredible feats accomplished by vegetarian and vegan food enthusiasts worldwide. They were empowering individuals to embrace a meat-free lifestyle, and guiding people’s well-being, animal welfare, and the preservation of our precious planet.
Armed with a newfound understanding of the impact of meat consumption on both personal health and climate change, we were determined to make environmentally conscious choices at every turn. We opted to upcycle tables and chairs, embraced second-hand purchases whenever possible, and diligently sourced our food, beverages, packaging, and other supplies from local suppliers, all in an effort to minimise our carbon footprint.
In June 2018, we proudly opened our doors. Within six months, we transitioned to a fully vegan menu, as we discovered the ability to create irresistibly delicious dishes without relying on dairy – a fantastic development indeed!
Fast forward to the present, 2023, and our restaurant is flourishing, thanks to our incredible customers. Amazingly, 75% of our loyal patrons are devout meat-eaters, a fact that fills us with joy and surpasses any expectations we had. Every endeavor we undertake is aimed at nourishing and inspiring our clientele while playing our part in the mission to save our precious planet.
